Hyssop was a holy herb of the ancient Greeks, used to cleanse sacred spaces.
Description
Hyssop is a brightly coloured shrub. During summer, the plant produces bunches of pink, blue or, more rarely, white fragrant flowers. The fresh herb is commonly used in cooking. Za’atar is a famous Middle Eastern herbal mix which has dried Hyssop leaves as one of the main ingredients. The plant is also commonly used by beekeepers to produce a rich and aromatic honey. Hyssop leaves are used as an aromatic condiment. A lightly bitter taste due to its tannins, and an intense minty aroma. It is a soothing, expectorant, cough suppressant, and also improves circulation and can stimulate the gastrointestinal system.
